Ingredients

for 2 portions

  • 500 g green asparagus
  • 150 g cherry tomatoes
  • 2 tbsp olive oil
  • 30 g flaked almonds, toasted
  • Lemon‑tahini sauce
  • 2 tbsp tahini
  • 2 tbsp water
  • 1 tbsp lemon juice (fresh)
  • 1 tsp maple syrup
  • ½ tsp garlic powder
  • Salt & pepper to taste

  1. Snap off the woody ends of the asparagus, halve the tomatoes. Preheat the oven to 220 °C top/bottom heat.

  2. Toss the asparagus and tomatoes with olive oil, salt & pepper.

  3. Spread the vegetables on baking paper and roast for 12–14 minutes until the asparagus browns lightly.

  4. Stir the sauce until smooth, season to taste. Arrange the asparagus, drizzle the sauce over it in a zigzag, top with almonds.
