Zombie peppers

The stuffed pepper halves, with spooky faces and a savoury taste, are a frightfully delicious addition to any Halloween party.

Ingredients

for 4 portions

  • 50 g rice
  • 4 bell peppers
  • One onion
  • 2 cloves of garlic
  • 3 tbsp oil
  • 200 g minced meat
  • 200 g mushrooms
  • 4 stalks of parsley
  • 2 tbsp tomato paste
  • 150 ml pilsner
  • 100 ml vegetable stock
  • salt, pepper

preparation

  1. First put the rice on to cook

  2. Meanwhile, you can wash the peppers and cut off their tops to deseed them and carve the spooky faces into them

  3. Now finely dice the onion and garlic and fry both with 3 tbsp oil in the pan

  4. After a few minutes, add the minced meat to sizzle along

  5. Meanwhile, wash and chop the parsley and mushrooms finely to add them to the pan as well

  6. After 2–3 minutes, deglaze the pan contents with the beer and tomato paste

  7. Then reduce the heat a little and let the sauce thicken slightly

  8. In the second-to-last step, add the cooked rice to the pan, fry it and season everything

  9. Now all you need to do is fill the peppers with the rice mixture, place them in a baking dish with a stock bath and bake for 25 minutes at 200 °C
